Blue Cheese and Bacon Pasta

This is a quick recipe to make.  Blue cheese gives a great flavour but, if you are not a fan, you can use feta, ricotta or a hard cheese like Parmesan

For 2 Servings

1 cup dried penne pasta

4 slices bacon, chopped and fried

2 Tblsp blue cheese, crumbled

1/4 cup cream

1 tsp garlic

Fresh parsley, chopped finely (optional)

Salt and pepper

Boil the penne as per packet instructions

Drain and shake off excess water

Return to the pot and stir in the cooked bacon, cream, garlic and cheese.

Season with salt and pepper

Garnish with fresh parsley
